Cordon Bleu Soup Kitchen
Soup kitchens do not have a reputation for high class cuisine. But if the
Bukharan food dished up for the impoverished inhabitants of south Tel Aviv
was served in more salubrious surroundings anywhere else it could pass as
cordon bleu ethnic cooking.
Diners are likely to receive:
Shorbo: The Bukharan equivalent of chicken soup. Beef cooked in a huge pot
together with chick peas, potatoes, tomatoes, carrots, peppers and onions.
Goshtgija: A triangular dough-pie covered in black cumin seeds and stuffed
with mince meat, peppers and onions (for vegetarians pumpkin is substituted
for the mince). The Somosa, popular in some regions of Bukhara has the
same ingredients but is round in shape.
Mantu: Small round pastries containing minced beef, potatoes and onions.
Palov: This tasty dish containing minced beef, rice, carrots and onion is
served after being friend in oil.
